Ingredients

  • 2 large, ripe, juicy tomatoes
  • 1 14 oz can Brazilian hearts of palm

Serves 2-4

Directions

1. For the salad dressing, use olive oil and vinegar, salt and pepper.

2. Thinly slice the tomatoes and arrange them around the edge of a round platter.

3. Drain the hearts of palm and cut them diagonally into 1/2-inch slices. Arrange them in the center of the platter.

4. Drizzle the salad with olive oil and vinegar, sprinkle with salt and grind some fresh pepper over it.
