Ingredients

Dressing:

  • 1pc clove garlic, minced
  • 2 tbsp lemon or lime juice
  • 1 tbsp olive oil
  • 1 tbsp agave syrup

Salad:

  • 1pc red bell pepper, seeds & membranes removed, sliced thinly
  • 1pc mango, peeled, sliced thinly
  • 1pc avocado, sliced thinly
  • 4 cups mesclun, arugula or baby greens
  • ½ cup fresh herbs of choice: basil or cilantro

Serves 1-2

Directions

1. Whisk together in a small bowl the dressing ingredients.

2. Combine in a large bowl the bell pepper, mango and avocado and pour the dressing over.

3. Toss gently to combine.

4. Set the greens onto a large plate and pour the salad over.

5. Garnish with herbs of choice.
