Ingredients

  • 1 pineapple, peeled, cored and cut into slices
  • 1 cup dark rum
  • 1/4 cup palm sugar or brown sugar
  • Coconut ginger ice cream (optional)
  • Candied ginger, chopped (optional)

Directions

1. Preheat oven to 300°F. Place pineapple slices in baking dish. Mix rum and sugar until well blended. Spoon over pineapple slices.

2. Bake, uncovered, 1 hour or until liquid evaporated and pineapple is tender. Serve with coconut ginger ice cream, if desired. Garnish with chopped candied ginger, if desired.
