Ingredients

  • 60 ml vegetable oil
  • 1 small bell pepper, sliced into strips
  • 1 medium onion, sliced
  • 2 small plum tomatoes, quartered
  • 250g saltfish (salt cod)
  • 800g cooked lima beans ( or butter beans, canned is fine)
  • 1 tsp garlic powder
  • 2 tbsp tomato ketchup

Directions

1. Soak the saltfish over night.

2. Drain then stand in fresh water for 2 hours.

3. Drain again then bring a pan of water to a boil, add the saltfish and boil for about 20 minutes, or until tender.

4. Drain the fish, flake the flesh and remove any bones.

5. Heat the oil in a frying pan. Add the onion, tomatoes and bell pepper and fry for about 4 minutes, or until softened.

6. Stir in the saltfish and fry for 2 minutes more before adding the butter beans, garlic powder and tomato ketchup.

7. Cook for about 15 minutes, or until thoroughly heated through.

8. Take off the heat and serve hot with some Jamaican festivals
